Avocado is a great source of vitamins, including B-6 and C. Although high in fat, it’s the best kind of fat for your body. I’m not the world’s biggest fan of the taste of avocado but as ice cream it’s pretty yummy and it’s a nice change from sorbet.
Ice cream was my favourite naughty dessert, I do find myself craving a tub when curling up watching the tv. This is the perfect replacement, without the guilt.
Step by step guide
Halve, pit and peel your avocados.
Using a blender put your avocados, lemon juice, vanilla extract, mint leaves, milk and syrup into it and blend until smooth.
Pour the mixture into your ice cream maker and use until frozen and smooth.
If you don’t have an ice cream maker pour into a deep freezer safe dish.
Whisk every 30 minutes until frozen.
- If you don’t like mint you can leave it out.
- Coconut milk works best however you can use whichever milk you feel most comfortable with.
- You can top the ice cream with coconut cream or some nuts.
I’ve found the only vegan dessert most restaurants offer is a sorbet; I jealously watch as bowls of ice cream trot past. If like me, you are a bit fed up of eating sorbet then you’ll enjoy this ice cream. Thicker and richer than sorbet it’s a winning dessert in my home.
If you dislike avocado with a passion then this isn’t for you, but if you are willing to give it a try you may just find it changes your mind of avocado’s.Last updated on:
