Green foods are often the tastiest. Cucumbers are high in nutrients and low in calories, they also help with hydration. Basil is a great digestion aid and anti-inflammatory, parsley has great antibacterial properties helping your body battle off infections.
This soup is a power soup, it will give your body a much-needed boost and it looks pretty cool too.
Step by step guide
Prepare all of the ingredients including deseeding and cutting up your cucumber and avocado, and place in a food processor (apart from the oil).
Add water as needed to keep a soup texture.
Taste and add more or less seasoning as required.
Top with diced bell peppers and diced red onions.
- You can add and remove ingredients to suit your preferences.
- I recommend a nice brown bread to accompany this soup.
- You can also use green tomatoes.
I know how difficult it is to get children to enjoy green foods but there’s so much benefit from eating a variety of vegetables. If you are making sure you are getting all the vitamins and minerals, then eating this soup full of variety means you can’t go wrong.
